Hello, fish tacos!
This recipe came about because I had a whole trout in the freezer, I love tacos, and who doesn’t like to eat w/ their hands?! The best part about this meal, besides it being tacos, I designed the plating to be shared. Share w/ your friends, fun for the kids, fun w/ a bae, or if you’re greedy, like me, share w/ ya gawd damn self !!! Bloop .
Anywho, although I’m giving you a recipe, this is actually a method so swap out things as you’d like & enjoy!
Pineapple Salsa:
1/4 cup cubed pineapple
1/2 of a Roma tomato chopped & seeded (take out all the seeds)
1 tablespoon finely chopped red onion
1/4 teaspoon minced jalapeño pepper
Juice from half a lime
salt & black pepper to taste
Combine all ingredients in a bowl & enjoy !
Guacamole:
1 tablespoon finely chopped red onion
1 tablespoon finely chopped Roma tomato
1/2 teaspoon garlic paste (see post on garlic butter – please & thank you)
Juice from 1 lime
1 avocado
salt, black pepper, & red pepper to taste
Mix & mash all ingredients until combined & enjoy !
*don’t mash too much, I like it chunky
** No I didn’t add cilantro b/c I don’t like it ! Taste like dirty dish water to me – this is not up for debate
Corn Salsa:
1 fresh corn on the cob
1/4 teaspoon garlic paste
1 teaspoon finely chopped white onion
1 small jalapeno
Juice from 1/2 a lime
1/2 of a Roma tomato chopped & seeded
salt & black pepper to taste
- Preheat oven to 450.
- Roast corn (for 15 minutes) and jalapeño (for 10 minutes)
- Cut the jalapeño in half and remove the seeds. Once the seeds are removed, cut each half into thirds and chop.
- Cut the corn kernels off the cob.
- Mix all ingredients in a bowl & enjoy.
Roast Fish:
*again this is a method, roast the fish of your liking
(I had the guy at the seafood counter remove the head and the bones out of my fish.)
I smeared the inside with leftover garlic paste, seasoned the inside of the fish with; seasoning salt, red pepper, black pepper, and garlic powder. Keep it simple due to all the toppings above. I then rubbed one side of the fish w/ olive oil so that I could get a crispy skin.
On the lower rack of my oven, I put some aluminum foil. On the upper rack, I put the whole fish on the rack (nothing under it) oil side up.
Roast the fish for 15-17 minutes in a 450 degree oven.
