K.I.S.S.

Everything doesn’t have to be 50 million different ingredients to impress or give you big flavor, sometimes you just need to KEEP IT SIMPLE STUPID! Seriously though.  This recipe is super simple & you only need 6-7 ingredients to make it happen.  (Great starter recipe or recipe for kids – if they make a mess, don’t blame me)

 

Simplicity:

1/4 – 1/3 cup GOOD olive oil

1lb grape tomatoes (or any small FRESH tomatoes will do)

1 small shallot (chopped)

1 large garlic clove (sliced)

1/2 teaspoon red pepper flake (yes 1/2 teaspoon unless you can’t handle it)

Salt to taste

Fresh basil (optional garnish)

 

How to do it:

Heat oil on medium low.

Once oil is heated, add red pepper and shallot & cook for 2 minutes.

 

Add tomatoes, garlic, and salt & cook until they burst & reduce.

NOW, let it do it’s thang.  (mine simmered for about an hour)

When you’re ready, serve w/pasta & add fresh basil.  OR, because it smelled so good & I was obsessed, I took bread & kept dipping it in the sauce as it cooked – oops!
